Cooking with Flavor

Seafood can be such a hassle.

Scallops are temperamental, and cod just tastes so generic. Here’s a low-key, yet exciting salmon dish for two:

Ingredients:
1 lb. salmon
¼ cup extra virgin olive oil
1 cup lemon juice
½ cup crumbled goat cheese
1 handful parsley
1 tsp. pepper, seasoning salt (I prefer Aromat salt), sage, basil
¼ tsp. garlic powder, lemon and pepper seasoning (optional)
A deep-sided baking dish (9” x 9” is perfect)
Aluminum foil

Directions:
Preheat oven to 400 degrees Fahrenheit. If the salmon is not yet skinned, remove skin. Rub salmon with extra virgin olive oil on both sides, cover all areas. Rub fish on both sides with parsley, pepper, seasoning salt, sage, basil, garlic powder, and lemon pepper seasoning (If you don’t have lemon and pepper seasoning, don’t sweat it.).

For no-hassle cleaning afterward, cover the dish with aluminum foil on the bottom and all sides. Place salmon in dish and pour lemon juice over it. Lemon juice should cover at least one inch of salmon.

Bake for 20 minutes, or until salmon edges are golden brown. Remove from oven. Immediately sprinkle goat cheese over salmon and let sit for 2 to 3 minutes to cool. Enjoy!
